Ingredients

For the fries
  • 1 small seedless watermelon cut into 1/2-inch fry sticks
  • 1 tbsp extra-virgin olive oil
  • 1 tsp flaky sea salt plus more to finish
  • 1/2 tsp ground sumac or smoked paprika
  • 1/2 tsp dried oregano
  • black pepper
  • 1 tbsp cornstarch or rice flour
For the tzatziki feta foam
  • 1/2 cup full-fat Greek yogurt
  • 1/3 cup crumbled feta
  • 1/3 cup cucumber finely grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 small garlic clove grated
  • 2 tbsp extra-virgin olive oil
  • 2-3 tbsp cold water or milk to thin
  • salt, pepper, dill or mint

Equipment

  • Air fryer
  • Blender
  • Wire rack

Method

  1. Slice the watermelon into 1/2-inch planks then fry-sized sticks. Pat very dry and rest on a rack 10 minutes to drop more moisture.
  2. Toss gently with the oil, salt, oregano, sumac, and pepper. Sprinkle the cornstarch and toss lightly to coat without clumping.
  3. Preheat to 400°F. Cook in a single layer 8 to 12 minutes, flipping carefully once, until the edges caramelise. They stay tender inside.
  4. Blend the tzatziki-feta ingredients until light and foamy, thinning with water. Serve cold with the warm fries.

Notes

Watermelon fries are soft-tender, not crisp — the appeal is warm caramelised edges against cold dip.
Dry them as much as possible or they steam.
Flip once, gently — they're fragile.
