Preheat your air fryer: Set it to 300°F (150°C).
A lower temperature helps prevent scorching and gives you even browning.
Prep your basket: Line the air fryer basket with a piece of parchment trimmed to fit, or use a shallow, oven-safe pan that fits inside the basket. Leave some room at the edges for airflow.
Mix the dry ingredients: In a large bowl, combine oats, chopped nuts, cinnamon, and salt. If using coconut or seeds that you want toasted, add them now.
Whisk the wet ingredients: In a small bowl, stir together honey, oil, and vanilla.
Warm the honey slightly if it’s thick so it coats evenly.
Combine: Pour the honey mixture over the oat mixture. Stir thoroughly until everything looks lightly glossy and evenly coated. Don’t leave dry pockets.
Load the basket: Spread the mixture in an even layer about 1/2 inch thick.
If your air fryer is small, cook in batches rather than piling it high.
Cook and stir: Air fry for 8 to 12 minutes total, pulling the basket out to stir every 3 to 4 minutes. Granola is done when it smells toasty and looks lightly golden—edges may brown faster.
Let it set: Transfer the granola to a baking sheet or large plate and press it lightly with a spatula to encourage clusters. Cool completely; it will crisp up as it cools.
Add dried fruit: Once cool, fold in dried fruit or any delicate add-ins.
Break into clusters as desired.
Serve: Enjoy with milk, on yogurt, or by the handful. For extra crunch, sprinkle a pinch of flaky salt on top.
