Air Fryer Glazed Mini Donut Bites

A quick vanilla cake batter baked in a mini muffin tray in the air fryer and dipped in a simple glaze.

Ingredients
  

For the donut bites
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1.5 tsp baking powder
  • 1/4 tsp fine salt
  • 1/2 cup milk
  • 1 large egg
  • 2 tbsp melted butter or oil
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest optional
For the glaze
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract

Equipment

  • Air fryer
  • Silicone mini muffin tray
  • Wire rack

Method
 

  1. Whisk the flour, sugar, baking powder, and salt. Separately whisk the milk, egg, melted butter, and vanilla, then combine just until smooth.
  2. Spray a silicone mini muffin tray and fill each cup about 2/3 full.
  3. Cook at 320°F for 6 to 8 minutes, until a toothpick comes out clean. Cool 5 minutes, then unmold.
  4. Whisk the glaze smooth and dip the tops of the cooled bites, letting the excess drip on a rack.

Notes

Don't overmix — stir just until combined for a tender crumb.
320°F so they cook through without over-browning.
Dairy-free: plant milk and oil; egg-free: a flax egg.
