Chicken thigh chunks marinated in garlic, lemon, and dried herbs, threaded onto skewers, and air fried to browned edges and a juicy centre.

Ingredients
  

  • 2 lb boneless skinless chicken thighs cut into 1.25-inch chunks
  • 2 tbsp olive oil
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 4 garlic cloves minced
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 2 tbsp fresh parsley chopped, plus more to garnish
  • red pepper flakes a pinch, optional

Method
 

  1. Toss the chicken with the oil, lemon zest and juice, garlic, salt, pepper, oregano, thyme, paprika, and parsley. Marinate 15 minutes to overnight.
  2. Thread 4 to 5 pieces per skewer, leaving small gaps for airflow. Soak wooden skewers first.
  3. Preheat the air fryer to 400°F for 3 to 4 minutes. Cook the skewers in a single layer 8 to 10 minutes, flipping halfway, to 165°F.
  4. Rest 3 minutes, squeeze lemon over, and shower with parsley.

Notes

Don't cram the skewers — the pieces need space to brown instead of steam.
Thighs stay juicy; breast works but pull it right at 165°F.
Serve with a dip trio: lemon-garlic yogurt, honey-mustard, green goddess.
