Ingredients

For the fries
  • 1 lb frozen zucchini fries breaded or unbreaded
  • 1 tbsp olive oil skip if pre-breaded and oiled
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt plus more to finish
  • 1/4 tsp black pepper
For the cucumber raita
  • 1 cup plain Greek yogurt
  • 1 small Persian cucumber grated or finely diced
  • 1-2 tbsp fresh mint or cilantro chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1 tsp lemon juice

Equipment

  • Air fryer
  • Small bowl
  • Box grater

Method

  1. Toss the frozen fries with the oil (if using) and the garlic powder, paprika, onion powder, salt, and pepper.
  2. Preheat the air fryer to 400°F. Cook in a single layer 10 to 14 minutes, shaking twice, until deep golden and crisp. Add 2 minutes for breaded fries.
  3. Salt the hot fries, plus grated Parmesan and pepper flakes if you like.
  4. Stir the raita ingredients and chill 10 minutes.

Notes

Cook from frozen — thawing makes them soggy.
Don't crowd the basket; a true single layer is what crisps them.
Squeeze the grated cucumber lightly so the raita isn't watery.
