Air Fryer Frozen Berry Chips with Coconut Whipped Cream

Frozen mixed berries tossed with a little cornstarch and air fried low into chewy-crisp fruit chips, served with coconut whipped cream.

Ingredients
  

For the berry chips
  • 3 cups frozen mixed berries blueberries, raspberries, sliced strawberries, halved cherries
  • 1-2 tbsp maple syrup or honey optional
  • 1 tsp cornstarch or arrowroot
  • fine salt a pinch
  • 1/2 lemon or orange zested, optional
For the coconut whipped cream
  • 1 can full-fat coconut milk or cream chilled overnight
  • 1-2 tbsp powdered sugar or maple syrup
  • 1/2 tsp vanilla extract
  • salt a pinch

Equipment

  • Air fryer
  • Parchment or air fryer liner
  • Hand mixer

Method
 

  1. Toss the frozen berries with the sweetener, cornstarch, salt, and zest.
  2. Preheat to 330°F and line the basket with parchment. Spread the berries in a single layer and cook 8 to 10 minutes, gently flipping halfway. Drop to 300°F and cook 5 to 8 minutes more until the edges look dry and darkened.
  3. Cool on the parchment 10 minutes; they firm as they cool.
  4. Scoop the solid coconut cream from the chilled can and whip with the sugar, vanilla, and salt until fluffy. Serve alongside.

Notes

Parchment is a must — the berries get very sticky.
Single layer, no piles — piles steam.
Blueberries crisp best; slice strawberries thin.
