Ingredients
  

  • 6 slices thick bread Texas toast, challah, or brioche, slightly stale, cut into sticks
  • 2-3 large eggs
  • 1/2-3/4 cup milk or half-and-half
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • salt a pinch
  • 1-2 tsp sugar or maple syrup
  • 1 tbsp melted butter optional
  • cinnamon sugar or crushed cornflakes optional coating

Method
 

  1. Whisk the eggs, milk, vanilla, cinnamon, salt, sugar, and melted butter.
  2. Dip each stick quickly — coat, don't soak. Roll in crushed cornflakes now if using.
  3. Preheat to 370°F. Arrange in a single layer, spritz lightly with oil, and cook 8 to 10 minutes, flipping halfway, until golden.
  4. Toss the hot sticks in cinnamon sugar and serve with maple syrup.

Notes

Slightly stale bread holds the custard; fresh bread turns to mush — dry it out first.
A quick dip, not a soak.
Don't crowd — a single layer crisps.
