- Whisk the eggs, milk, vanilla, cinnamon, salt, sugar, and melted butter.
- Dip each stick quickly — coat, don't soak. Roll in crushed cornflakes now if using.
- Preheat to 370°F. Arrange in a single layer, spritz lightly with oil, and cook 8 to 10 minutes, flipping halfway, until golden.
- Toss the hot sticks in cinnamon sugar and serve with maple syrup.
Notes
Slightly stale bread holds the custard; fresh bread turns to mush — dry it out first.
