- Preheat the air fryer to 300°F. Score the ham in a shallow 1/4-inch crosshatch. Set it in a loose foil boat to catch drips, top exposed.
- Whisk the glaze. Brush on half and place the ham cut-side down.
- Cook at 300°F for 20 minutes. Brush on more glaze, raise to 350°F, and cook 10 to 15 minutes more, glazing once or twice, until deep and glossy. Total time by weight: 2 lb 25 to 35 minutes, 3 lb 30 to 40, 4 lb 35 to 50, to 130 to 140°F inside.
- Rest 10 minutes, then slice.
Notes
Score the crosshatch so the glaze has somewhere to grip.
Low first, then hot — the low stretch warms it through, the hot finish sets the glaze.
