Ingredients

  • 6 large hard-boiled eggs peeled
  • 1/4 cup mayonnaise
  • 2 tsp Dijon mustard
  • 2 tsp pickle juice or lemon juice
  • 1 tbsp dill pickle or celery finely minced, optional
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt and black pepper
  • 6 slices sturdy sandwich bread or brioche
  • 2 tbsp softened butter
  • paprika, chives, or dill to garnish

Equipment

  • Air fryer
  • Mixing bowl
  • Piping bag or spoon

Method

  1. Halve the eggs, mash the yolks with the mayo, Dijon, pickle juice, garlic and onion powders, salt, and pepper, then fold in the minced pickle. Chop the whites and stir them in, or reserve for garnish.
  2. Trim the crusts if you like, cut each slice into 4 squares, and butter one side. Air fry at 375°F for 3 to 5 minutes until crisp and golden.
  3. Pipe or spoon the filling onto each toast square and dust with paprika and chives.

Notes

Sturdy bread — soft bread collapses under the filling.
Assemble just before serving so the toast stays crisp.
Filling too stiff? A teaspoon of warm water loosens it.
