Ingredients

For the tortellini
  • 1 lb cheese tortellini fresh or refrigerated
  • 1-2 tbsp olive oil
  • 1 tsp Italian seasoning
  • salt and black pepper
For the optional breading
  • 2 eggs beaten with a splash of water
  • 1 cup panko
  • 1/2 cup finely grated Parmesan
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
To serve
  • 1.5 cups marinara sauce warmed
  • grated Parmesan, parsley, red pepper flakes to finish

Equipment

  • Air fryer
  • Two shallow bowls

Method

  1. Unbreaded: toss the tortellini with the oil, Italian seasoning, salt, and pepper. Breaded: dip in egg, then the panko-Parmesan mix, pressing to stick, and spritz with oil.
  2. Preheat to 375°F. Cook in a single layer 8 to 10 minutes (unbreaded) or 9 to 12 minutes (breaded), flipping or shaking halfway, until deep golden and blistered.
  3. Finish with Parmesan and parsley and serve with the warm marinara.

Notes

Fresh or refrigerated tortellini — frozen must be fully thawed and dried first.
Single layer so they crisp instead of steaming into a clump.
Serve hot — they soften as they sit.
