Ingredients
  

For the bowl
  • 4 fillets skinless salmon 4 to 6 oz each
  • 1 tbsp neutral oil
  • 1 tbsp soy sauce
  • 3 cups cooked rice jasmine, brown, or quinoa
  • 2 cups toppings cucumber, avocado, shredded carrot, edamame
For the sauce
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 tsp rice vinegar
  • 1 tsp soy sauce

Equipment

  • Air fryer
  • Small bowl

Method
 

  1. Pat the fillets dry and brush with the oil and soy sauce.
  2. Preheat the air fryer to 400°F (205°C). Cook 8 to 10 minutes, until crisp-edged and flaking.
  3. Whisk the mayonnaise, sriracha, rice vinegar, and soy sauce.
  4. Divide the rice among bowls, add the toppings, flake the salmon over, and drizzle with sauce.

Notes

Brush with soy before cooking for a savoury crust straight off the fish.
Warm rice, cold toppings is the contrast that makes the bowl.
