Ingredients
  

For the fries
  • 3 medium sweet potatoes cut into 1/2-inch sticks
  • 1.5-2 tbsp avocado or light olive oil
  • 1 tbsp cornstarch
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
For the cranberry glaze
  • 1/2 cup whole-berry cranberry sauce
  • 1 tbsp maple syrup
  • 1-2 tsp apple cider vinegar or orange juice
  • 1 tbsp butter
  • 1 tsp orange zest optional
  • salt a pinch
To finish
  • chopped rosemary or thyme
  • toasted pecans or pumpkin seeds

Equipment

  • Air fryer
  • Large bowl
  • Small saucepan

Method
 

  1. Soak the cut fries in cold water 20 to 30 minutes, then drain and pat very dry.
  2. Toss with the oil first, then the cornstarch, then the salt, pepper, paprika, and garlic powder.
  3. Preheat to 380°F. Cook in batches in a snug single layer 12 to 16 minutes, shaking halfway, until the edges crisp.
  4. Simmer the cranberry sauce, maple syrup, and vinegar 2 to 3 minutes until glossy, then whisk in the butter and orange zest off the heat.
  5. Toss the hot fries with half the glaze, add more to taste, and finish with herbs and nuts. Serve at once.

Notes

Oil first, then cornstarch — it sticks better over oil, and too much turns chalky.
Don't soak the fries in glaze or you lose the crunch.
Serve immediately — glazed fries soften as they sit.
