- Soak the cut fries in cold water 20 to 30 minutes, then drain and pat very dry.
- Toss with the oil first, then the cornstarch, then the salt, pepper, paprika, and garlic powder.
- Preheat to 380°F. Cook in batches in a snug single layer 12 to 16 minutes, shaking halfway, until the edges crisp.
- Simmer the cranberry sauce, maple syrup, and vinegar 2 to 3 minutes until glossy, then whisk in the butter and orange zest off the heat.
- Toss the hot fries with half the glaze, add more to taste, and finish with herbs and nuts. Serve at once.
Notes
Oil first, then cornstarch — it sticks better over oil, and too much turns chalky.
Don't soak the fries in glaze or you lose the crunch.
Serve immediately — glazed fries soften as they sit.
