Preheat the air fryer: Set to 350°F (175°C) for 3–5 minutes.
A hot basket helps the bites start crisping right away.
Prep the basket: Lightly spray the basket with nonstick spray or brush with oil. Avoid heavy sprays that can build up residue.
Cut the dough: Open the cinnamon roll can and separate the rolls. Cut each roll into 4 pieces for standard bites, or 6 for mini bites.
Mix the coating: In a small bowl, stir together the sugar and cinnamon.
If using melted butter, brush it lightly over the dough pieces to help the coating stick.
Coat the bites: Toss the dough pieces in the cinnamon-sugar until evenly coated. Shake off any excess.
Arrange in the basket: Place bites in a single layer with a little space between them. Work in batches if needed. Do not overcrowd.
Air fry: Cook at 350°F (175°C) for 5–7 minutes, shaking the basket or flipping halfway.
They should be golden brown and puffed with no raw dough showing.
Warm the icing: While they cook, soften the icing packet. For a richer glaze, mix the packet with cream cheese, a splash of milk, and vanilla until smooth.
Glaze and serve: Transfer hot bites to a plate and drizzle with icing. For extra sparkle, dust with a pinch of cinnamon-sugar.
Serve warm.
