Classic choux churro dough piped into bites, chilled, air fried golden, and rolled in cinnamon sugar for a dessert-tray centrepiece.

Ingredients
  

For the churro bites
  • 1 cup water
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • oil spray
For the coating
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon

  • Air fryer
  • Saucepan
  • Piping bag
  • Parchment

Method
 

  1. Bring the water, sugar, salt, and butter to a simmer. Add the flour all at once and stir hard until a dough ball forms and a thin film coats the pan, 1 to 2 minutes. Cool 5 minutes.
  2. Beat in the eggs one at a time, then the vanilla, until the dough is glossy and pipeable.
  3. Pipe 1-inch blobs onto parchment and chill 10 minutes.
  4. Preheat to 375°F. Mist the basket, arrange the bites with space, and cook 7 to 9 minutes, shaking once, until deep golden and puffed.
  5. Toss the warm bites in the cinnamon sugar.

Notes

Cook the dough until a film coats the pan — undercooked paste won't puff.
Chill the piped bites so they hold shape.
Dips: warm chocolate ganache, dulce de leche, or a vanilla glaze.
