Servings: 4 servings

Ingredients

  • 1 pound refrigerated pizza dough (or 2 large flatbreads/naan)
  • 1½ cups shredded low-moisture mozzarella
  • ¼ cup grated Parmesan or Pecorino Romano
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, finely minced (or 1 teaspoon garlic powder)
  • 1 tablespoon olive oil (for brushing the basket and dough)
  • 1 teaspoon Italian seasoning (or a mix of dried oregano and basil)
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Kosher salt and black pepper, to taste
  • Fresh parsley or basil, chopped, for garnish (optional)
  • Marinara or pizza sauce, for dipping

Method

  1. Preheat the air fryer: Set to 375°F (190°C) for 3–5 minutes. A preheated basket helps the dough puff and the cheese melt evenly.
  2. Prep the garlic butter: In a small bowl, mix melted butter, minced garlic (or garlic powder), and Italian seasoning. Set aside.
  3. Prepare the dough: Lightly flour a work surface. Roll or stretch the pizza dough into a rectangle about ¼-inch thick, sized to fit your air fryer basket. If using flatbread/naan, no rolling needed.
  4. Oil the basket: Brush the air fryer basket or tray with olive oil to prevent sticking. You can also line it with parchment made for air fryers, but still brush lightly with oil.
  5. Par-bake the base: Transfer the dough to the basket and cook for 3–4 minutes. This sets the surface and keeps the center from getting soggy once the cheese goes on.
  6. Add flavor and cheese: Carefully remove the dough. Brush it generously with the garlic butter. Sprinkle on mozzarella in an even layer, then Parmesan. Add a pinch of salt, black pepper, and red pepper flakes if using.
  7. Air fry to golden perfection: Return to the air fryer and cook for 5–7 minutes at 375°F, until the cheese is melted, bubbling, and starting to brown at the edges. Check at the 5-minute mark to avoid over-browning.
  8. Finish and slice: Let it rest for 1–2 minutes so the cheese sets slightly. Sprinkle with chopped parsley or basil. Slice into breadsticks with a pizza cutter or sharp knife.
  9. Serve: Plate with warm marinara or your favorite dip. Enjoy right away for the best texture.
