Ingredients

For the bean fries
  • 1 lb yardlong beans trimmed, cut into 3 to 4-inch lengths
  • 1-1.5 tbsp neutral oil
  • 2 tsp smoked paprika
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2-1 tsp cayenne
  • 1 tsp black pepper
  • 1 tsp kosher salt
For the remoulade
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp whole-grain mustard optional
  • 1 tbsp prepared horseradish
  • 1 tbsp lemon juice
  • 1 tbsp dill pickle relish or minced cornichons
  • 1 tbsp capers minced
  • 1 small garlic clove grated
  • 1-2 tsp hot sauce
  • 1 tsp smoked paprika
  • cayenne, sugar, salt, pepper

Equipment

  • Air fryer
  • Mixing bowl
  • Small bowl

Method

  1. Rinse and dry the beans well. Toss with the oil, then 2 to 3 tsp of the Cajun blend (save the rest).
  2. Preheat to 400°F. Spread in a single layer, slight overlap fine, and cook 7 to 9 minutes, shaking at 4. Bump to 400°F for the last 2 minutes for more char.
  3. Whisk all the remoulade ingredients and chill 15 minutes.
  4. Serve the hot beans with the remoulade.

Notes

Dry the beans completely — water means steam, not char.
Cut the cayenne to 1/4 tsp for mild, keep 1 tsp for brave.
Similar lengths cook evenly.
