Air Fryer Brown Sugar Salmon (Swerve Brown)

Salmon glazed with a sugar-free brown sweetener, soy, and citrus that caramelises against the fish in the air fryer. Two coats build the crust without a sugar load.

Ingredients
  

  • 1.5-2 lb skin-on salmon fillets
  • 1/4 cup Swerve Brown or brown sugar
  • 2 tbsp soy sauce or tamari
  • 1 tbsp lemon juice or rice vinegar
  • 2 garlic cloves minced
  • 1 tsp fresh ginger grated, optional
  • 1 tsp sesame oil or olive oil
  • kosher salt and black pepper
  • sesame seeds and sliced green onions to garnish

Method
 

  1. Stir the Swerve Brown, soy, lemon juice, garlic, ginger, and oil until smooth.
  2. Pat the fillets dry and season lightly with salt and pepper.
  3. Brush the glaze over the top and rest 5 to 10 minutes.
  4. Cook skin-side down at 400°F (204°C) for 8 to 12 minutes depending on thickness.
  5. Brush with a final coat in the last minute, then rest 2 to 3 minutes and garnish.

Notes

Thickness: thick fillets need the full 12 minutes; adjust by about 2 minutes per half-inch.
Deeper caramel: brush in two coats, letting each set 1 to 2 minutes in the air fryer.
Stickier glaze: reduce it on the stove first.
