Ingredients
  

For the peach chips
  • 4 ripe but firm peaches sliced into 1/4-inch rounds, pitted
  • 1-2 tbsp neutral oil
  • 2 tsp brown sugar
  • 1-1.5 tsp BBQ seasoning
  • 1/4 tsp fine salt
  • chili powder or cayenne a pinch, optional
For the bourbon honey dip
  • 3 tbsp honey
  • 1-2 tbsp bourbon
  • 2 tsp lemon juice
  • 1/4 tsp vanilla extract
  • flaky salt a pinch

  • Perforated parchment
  • Wire rack
  • Small bowl

Method
 

  1. Pat the peach slices dry. Toss with the oil, then the brown sugar, BBQ seasoning, salt, and chili, coating evenly without caking it on.
  2. Preheat to 325°F and line the basket with perforated parchment. Cook the slices in a single layer 10 to 14 minutes, flipping halfway, until the edges are dry and caramelised. Drop to 300°F for 3 to 5 more minutes for extra crisp.
  3. Cool on a wire rack; they crisp as they cool.
  4. Whisk the honey, bourbon, lemon juice, and vanilla, and finish with flaky salt.

Notes

Firm, just-ripe peaches — squishy ones turn to jam.
Low heat, 325°F, dries the chips without burning the sugar.
Watch the last 3 minutes closely.
