- Pat the peach slices dry. Toss with the oil, then the brown sugar, BBQ seasoning, salt, and chili, coating evenly without caking it on.
- Preheat to 325°F and line the basket with perforated parchment. Cook the slices in a single layer 10 to 14 minutes, flipping halfway, until the edges are dry and caramelised. Drop to 300°F for 3 to 5 more minutes for extra crisp.
- Cool on a wire rack; they crisp as they cool.
- Whisk the honey, bourbon, lemon juice, and vanilla, and finish with flaky salt.
Notes
Firm, just-ripe peaches — squishy ones turn to jam.
