Ingredients

For the bites
  • 1 lb skinless salmon cut into 1-inch cubes
  • 1 egg beaten
  • 3/4 cup panko
  • 2 tbsp sesame seeds
  • kosher salt and black pepper
  • oil spray
For the bang bang sauce
  • 1/3 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp lime juice

Equipment

  • Air fryer
  • Two bowls
  • Paper towels

Method

  1. Pat the salmon dry, season, dip each cube in egg, then roll in the panko-sesame mix.
  2. Preheat the air fryer to 400°F (205°C). Spray the bites and cook 8 to 10 minutes, flipping halfway, until golden.
  3. Whisk the mayonnaise, sweet chili sauce, sriracha, and lime juice.
  4. Toss the hot bites with the sauce, or serve it on the side for dipping to keep them crisp.

Notes

Sauce on the side keeps the crust crisp; toss only what you will eat right away.
Even cubes cook at one rate — trim the thin belly separately.
