Ingredients

  • 2 large ripe bananas spotty, well mashed
  • 1/2 cup self-rising flour plus extra for dusting
  • pinch of cinnamon optional
  • 1/2 tsp vanilla extract optional
  • spray oil or melted butter
  • honey, maple syrup, or melted chocolate to drizzle

Equipment

  • Air fryer
  • Mixing bowl

Method

  1. Mash the bananas smooth, then stir in the flour (and cinnamon and vanilla if using) into a soft, slightly sticky dough. Add a little more flour if it won't hold.
  2. With floured hands, roll into 1-inch balls or small ovals.
  3. Preheat to 350°F. Spray the bites and cook in a single layer 10 to 12 minutes, turning once, until golden and cooked through.
  4. Drizzle with honey, maple syrup, or melted chocolate.

Notes

Very ripe, spotty bananas — brown freckles mean maximum sweetness.
Self-rising flour only — plain flour won't rise. No self-rising? Add 3/4 tsp baking powder and a pinch of salt per 1/2 cup plain.
Add-ins: mini chocolate chips, shredded coconut, chopped nuts.
