Halved sprouts tossed in a balsamic, maple, and Dijon glaze and air fried cut-side down until charred and caramelised, finished with Parmesan.

Ingredients
  

  • 1-1.5 lb Brussels sprouts trimmed and halved
  • 1.5 tbsp olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tsp maple syrup or honey
  • 1 tsp Dijon mustard optional
  • 1/2 tsp garlic powder or 2 cloves minced
  • kosher salt and black pepper
  • grated Parmesan to finish

Method
 

  1. Preheat the air fryer to 380°F. Whisk the oil, balsamic, maple, Dijon, garlic, salt, and pepper. Toss the sprouts until glossy.
  2. Spread cut-side down in a single layer. Small sprouts (halved): 10 to 12 minutes; large (quartered): 12 to 14, shaking once. Go to 390°F for a darker char.
  3. Toss the hot sprouts with Parmesan.

Notes

Cut-side down for maximum caramelisation.
Quarter jumbo sprouts so everything cooks evenly.
Add-ins: crispy bacon, toasted nuts, dried cranberries.
