Air Fryer Asian Glazed Salmon

Salmon fillets glazed with a four-ingredient soy-honey-ginger-garlic mix, air fried, then finished with a second coat for gloss. A thin, even coat is what caramelises instead of steaming.

Ingredients
  

  • 4 fillets salmon 6 to 8 oz each, skin-on
  • 2 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tsp rice vinegar
  • 1 garlic clove minced
  • 1 tsp fresh ginger grated
  • 1/2 tsp sesame oil
  • chili flakes a pinch, optional
  • scallions and sesame seeds to garnish

Method
 

  1. Whisk the soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil.
  2. Preheat the air fryer to 400°F (205°C) for 2 to 3 minutes.
  3. Pat the salmon dry, season with pepper, and brush with a thin layer of glaze.
  4. Air fry skin-side down 8 to 10 minutes, until just opaque and flaking.
  5. Brush with the remaining glaze and return for 1 to 2 minutes to set. Garnish.

Notes

Thin coat: too much glaze steams the fish and turns gummy.
Rest between coats: 2 minutes after the first glaze lets it set before the finishing coat.
Too-thick glaze: loosen with a splash of hot water or a little more rice vinegar.
