Prep the apples: Core and thinly slice the apples, about 1/8 to 1/4 inch thick. Toss with lemon juice to prevent browning.
Make the honey mixture: In a small bowl, stir together honey, melted butter, cinnamon, vanilla (if using), a pinch of salt, and sugar (if using).
Taste and adjust sweetness.
Prep the pastry: Lightly flour a clean surface. Unfold the puff pastry and gently roll it to smooth the creases and slightly enlarge it. Aim for a rectangle that fits your air-fryer basket with a little room to spare.
Create a border: Score a 1/2-inch border around the edges with a sharp knife, without cutting all the way through.
This helps the edges puff up.
Brush the base: Lightly brush the center (inside the border) with a thin layer of the honey mixture. Don’t soak it—just enough to coat.
Layer the apples: Arrange apple slices in overlapping rows inside the border. Keep them fairly tight so every bite is apple-forward.
Brush and glaze: Brush the apples with more of the honey mixture.
If you like, brush the border with egg wash for extra shine.
Prep the air fryer: Line the basket with air-fryer-safe parchment or lightly spray with nonstick spray. Preheat to 360°F (182°C) for 3–4 minutes.
Cook the tart: Carefully transfer the assembled tart to the basket. Air fry at 360°F (182°C) for 10–14 minutes, until the pastry is golden and the apples are tender with caramelized tips.
Check at the 8-minute mark to ensure the edges aren’t browning too fast.
Finish with honey: Remove and immediately drizzle a little extra honey over the apples for a glossy finish. Let it cool for 5 minutes to set.
Slice and serve: Cut into squares. Serve warm as-is or with a scoop of vanilla ice cream or a dollop of whipped cream.
