Ingredients

Rainbow chips
  • 1 small red beet peeled
  • 1 small sweet potato
  • 1 small golden beet or yellow squash
  • 1 small zucchini
  • 1 small purple sweet potato or purple carrot
  • 1-2 tbsp avocado or olive oil
  • 1 tsp fine sea salt plus more to taste
Unicorn magic dip
  • 1 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • 1 small garlic clove grated
  • 1 tbsp each dill, chives and parsley chopped
  • beet powder, matcha or turmeric for color swirls

Method

  1. Slice each vegetable 1/16 to 1/8 inch thick with a mandoline. Keep the beets separate so they don’t stain the rest.
  2. Blot the slices dry; salt the zucchini and let it sit 10 minutes, then blot again.
  3. Toss each color lightly with oil and salt.
  4. Air fry each color separately at 330°F (165°C) for 12 to 16 minutes, shaking often, until the edges are crisp. Pull chips as they finish.
  5. Mix the yogurt, mayo, lemon, honey, garlic, herbs and salt. Divide and swirl in the colors.

Notes

Low and slow: a lower temperature keeps the colors bright instead of brown.
They crisp as they cool, so take them out when the centers are just dry.

Why Rainbow Veggie Chips Rule (And Regular Chips Cry)

Veggie chips don’t pretend to be “healthy”—they just show up with bold flavor and crunch while sneaking in fiber and vitamins. We slice thin, crisp them quickly, and salt them just right. No greasy fingers, no mystery powders, just real veggies doing the most. Bonus: You control everything—oil, salt, spices, and texture. You like shatter-crisp? Go thinner. You like a bit of bend? Slightly thicker. Your chips, your rules.

What You’ll Need (Nothing Wild)

Veggies (choose 4-5 for the rainbow):
  • Red: Beets (golden beets look amazing too)
  • Orange: Sweet potatoes or carrots
  • Yellow: Yellow beet or yellow squash
  • Green: Zucchini or kale (for bonus crisp)
  • Purple: Purple sweet potato or purple carrot
For the chips:
  • 1-2 tablespoons avocado or olive oil
  • 1 teaspoon fine sea salt (plus more to taste)
  • Optional spice blends: smoked paprika, garlic powder, Everything Bagel seasoning, chili lime, curry powder
For the Unicorn Magic Dip:
  • 1 cup Greek yogurt (or dairy-free yogurt)
  • 2 tablespoons mayonnaise (adds silky magic)
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, grated
  • 1/2 teaspoon salt + black pepper to taste
  • Herb mix: 1 tablespoon chopped dill, 1 tablespoon chives, 1 tablespoon parsley
  • Swirls (pick 2-3 for color and flavor): beet juice or powder (pink), spirulina or matcha (green), turmeric (golden)

Prep Like a Pro (Speed + Safety)

You only need a knife and a steady hand, but if you own a mandoline, now is its moment to shine. Uniform slices = even crisping = fewer burnt offerings to the snack gods.

Slice Thickness Sweet Spot

  • Beets and potatoes: 1.5 mm to 2 mm (paper-thin but not see-through)
  • Zucchini and squash: 2 mm to 3 mm (they hold water—slightly thicker works)
  • Carrots: 1.5 mm if you can manage it, or they take longer
Pro tip: Blot watery veggies (zucchini, yellow squash) with paper towels after slicing. Beets stain, FYI—wear an apron unless you want pink polka-dot vibes.

Air Fryer Game Plan (Crunch Without Drama)

We air fry in small batches so every slice gets airflow. Crowding equals soggy sadness—don’t do it.
  1. Preheat the air fryer to 325°F (163°C). Yes, lower than you think. Slow crisping prevents scorching.
  2. Toss slices with just enough oil to glisten—about 1 teaspoon per cup of slices.
  3. Season lightly with salt now, then add bonus spices after cooking to avoid burning.
  4. Arrange a single layer of slices in the basket. No overlap. Use parchment with holes if your basket sticks.
  5. Cook 8–12 minutes, shaking or flipping halfway. Remove any done chips early; give stubborn ones an extra 1–3 minutes.
  6. Transfer to a cooling rack and sprinkle your spice blend while warm.

Veggie-by-Veggie Timing

  • Beets: 10–12 minutes. Look for slightly darker edges, not brown-black.
  • Sweet potatoes: 9–11 minutes. They go from “almost there” to “very done” fast, so watch.
  • Zucchini/yellow squash: 7–9 minutes. Dry well first for max crisp.
  • Carrots: 10–12 minutes. Thin wins.
  • Kale (bonus): Lightly oiled, 300°F for 6–8 minutes. Don’t walk away.
Important: Chips continue crisping as they cool. If they feel a touch soft right out of the fryer, give them 3–
