Ingredients

Star crisps
  • 2 large russet potatoes scrubbed
  • 1 tbsp avocado or olive oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp garlic powder
Galaxy glitter dip
  • 3/4 cup Greek yogurt
  • 2 tbsp mayonnaise
  • 1 tsp lemon juice
  • 1/4 tsp salt
  • natural food coloring or butterfly pea powder for swirls
  • edible glitter optional

Method

  1. Slice the potatoes 1/8 inch thick and punch out stars with a small cookie cutter.
  2. Soak the stars in cold water 15 minutes, then pat completely dry.
  3. Toss with the oil, salt and garlic powder.
  4. Air fry at 360°F (182°C) in a single layer for 12 to 14 minutes, shaking every 4 minutes, until golden and crisp. Work in batches.
  5. Stir the yogurt, mayo, lemon juice and salt together, then swirl in the colors and sprinkle with glitter just before serving.

Notes

Save the scraps: air fry the potato offcuts the same way for a cook's snack.
Crisper stars: they finish crisping as they cool on a rack.
